Oven-Fried Chicken Monterey

Okay, our request line is open at 1-800-LUV-FOOD.  On the line now is pajamma momma calling from Florida.

HOST:   Go ahead caller.

PJM:  Can you please get me the recipe to Oven-Fried Chicken Monterey?  It’s in the Better Homes and Gardens cookbook, (c) 1981, on page 297.  I used it so much that the recipe fell out of my cookbook.  Puhleeeeeeeeeezzzzzzze?

 HOST:  Okay, pajamma mamma.  Here’s the recipe for Oven-Fried Chicken Monterey:

Ingredients:

½ cup all-purpose flour

One envelope of 1 ¼-ounce taco seasoning mix

16 chicken thighs (4 pounds)

¼ cup butter or margarine

1 cup crushed tortilla chips

2 tablespoons finely chopped onion

1 tablespoon cooking oil

2 tablespoons all-purpose flour

One 13-ounce can evaporated milk

¼ teaspoon bottled hot-pepper sauce

1 cup shredded Monterey Jack cheese (4 ounces)

¼ cup sliced pitted ripe olives

1 teaspoon lemon juice

Lettuce

Oven 375°

Combine the ¼ cup flour and taco seasoning mix in a plastic bag.  Add 2 or 3 chicken pieces at a time and shake to coat.  Melt butter in a 15½x10½x2-inch baking pan.  Place chicken in pan, turning once to butter surfaces.  Roll each thigh in crushed chips and return to baking pan.

Bake in a 375° oven about 50 minutes or till tender.  Meanwhile, for cheese sauce, cook onion in oil till tender but not brown.  Stir in the two tablespoons of flour and ¼ teaspoon salt.  Add evaporated milk and pepper sauce all at once; cook and stir till thickened and bubbly.  Cook and stir 1 to 2 minutes more.  Add cheese, olives, and lemon juice, stirring just till cheese melts.

To serve, line a serving dish with leaf lettuce.  Top with some shredded lettuce and chicken.  Spoon some of the cheese sauce over chicken.  Pass remaining sauce.  Serves 8.

  5. I think I will try it because it sounds like it will taste really good. Other than Cranberry-Orange bread and waffles, I made nothing yesterday. Watched some football and tried to keep the number of dog confrontations to a manageable number.

    Three dogs. What was I thinking? It’ll be great, they’re all sweet hearts who just have to work out who is in charge.

  6. I have one dog. I got him at the pound in Novemer. Best purchase I’ve ever made. I think every kid deserves a good dog and we got one. He’s the best.

  8. You need another puppy. Of my three, Samantha came from a family who no longer wanted her. Good thing too, because they had hit her with their car twice already and she wasn’t but 4 months old. Jessie, who is about 20 months old, I adopted from the humane society in late October. Annie found me on Friday, the second time a Golden Retriever has come up to me at my parked car in the driveway. I’d estimate that Annie is about 2-years old. Nala, who passed away in October, was from a family who could no longer keep her. I got Nala when she was 20-months old. Good thing for Nala because she had heartworm when I got her and I took good care of her. We had nine years together.

    I love all dogs, always have and always will. Annie has the same mannerisms as Nala, looks the same but with a bit lighter colored coat, is the same size, has the same personality, immediately took charge of the house, and will climb into my lap just like Nala did. Where she is different is that she will come up to me outside and sit next to my leg. Then she leans into me. Captured my heart immediately.

    Dog people are the best people. My personal prayer is that I am as good a person as my dogs think I am.

  9. We had a black standard poodle (Molly) who was the smartest, sweetest thing. She died from cancer a few years ago and since we travel in our side-line business now at the drop of a hat we decided to not have a dog at present but I know we will when we’re old or not traveling–whichever comes first. And it’ll be a female black standard poodle.

  10. PattyAnn, probably what I looked forward to the most when I would be retired from the Air Force was that I would be able to get a dog. And I wouldn’t have to worry about being sent TDY (temp duty) to the Desert for 4 or 6 months and I couldn’t be ordered to pick up and move permanently. I loved the military and wouldn’t trade those 20 years for anything but my dream for retirement was always to have a dog. Well a dog has turned into the plural and thank God for that.

    Annie and Jessie seem to be starting to get along. The play fights seem a little too fierce at times but there is a lot of tail wagging going on at the same time so that makes me happy.
